"It’s a beautiful shop, bowling you over straight away with a tasting table where you can sample some of their bestsellers. Then you can peruse their pickled veg, the usual suspects of olives, chillis and artichokes. Then on to the confectioneries, where you can browse the chocolate-covered ginger, huge shards of chocolate studded with hazelnuts and many more.

Then there’s the glory: the cold meats counter. They smoke and cure their own meats onsite and take an awful lot of pride in their work. Something I went back for a couple of times was their Suffolk Black ham, all treacley and rich with a powerful cure flavour. Absolutely divine and worth a detour for. To take home with me I grabbed a couple of things: smoked Montgomery cheddar and ham offcuts. Contrary to the picture you get a great chunk of leftover bacon for just £1. So good."

Eating Suffolk hams at "haysel" time

Neil Lanham will be in Peasenhall on 8th April with stories of "Ruby and her horses", an evening of stories and songs which also form the basis for his new book There's a Story My Mother Told. You can see more about Neil at his website.

In the book Neil tells of one of his favourite recipes and remembers the Suffolk hams hanging from the ceiling, some a year old. "Home-cured, the recipe handed down, must have gone back to the Romans!" He writes. "There's no other taste like this in any other county, Suffolk sweet-cured ham. They were hung at Michaelmas, 11th October in Suffolk, because we go by the Gregorian Calendar, and the ham wouldn't be eaten till 'haysel' time in the spring."

While we might not recommend keeping Emmett's hams for quite that long, our hams can be stored for many weeks before cooking - although you will probably want to eat them sooner than that.

There is still time to order ham and bacon for Easter, and if you are coming to Suffolk over the holiday period, make sure you come and see us in Peasenhall.

Easter Ham Recipe

If you are having an Emmett's ham this Easter, remember Mark's famous recipe for a ham that can be enjoyed hot or cold.

Lay a large piece of tin foil onto a baking tray.

Cut in half 4-6 oranges. Squeeze out the juice into a pouring vessel. Cut into small pieces the orange rind and flesh.

Put this onto the silver foil to create a bed of oranges and place your gammon on top.

Pour on the orange juice. Add some good quality prunes (we sell them!) and a good quantity of runny honey over the top.

Cover the gammon completely with foil and place in a hot oven. I have an electric oven and cook my gammon at 180/190 for 20 minutes per lb/45 minutes per kg. If you have a home thermometer the centre of the ham should be 74C for gammons on the bone and 84C for off the bone.

Mark's recipe for Christmas ham

You may have your own way of cooking the Christmas ham, but Mark's recipe is always a winner.

Delia's Happy Christmas has a super special Christmas dessert recipe for vanilla bean ice cream with raisins soaked in Pedro Ximénes sherry rather like the one Mark has been recommending for the past few years. Emmett's was in the first ever Delia Smith Christmas Book, and we are delighted that we are still listed at the front of the new book in what Delia describes as a "list of suppliers who have served us faithfully for years."

Some of the first hams are now coming out of the smokehouse. They go directly into the cool store ready for shipping to customers. At the same time, the new Emmett's Christmas ham is being prepared in a special marinade of cinnamon, ginger, nutmeg, star anise, cloves and black pepper. These will now soak for weeks awaiting their turn for smoking.

Only a limited number of this special Christmas ham will be prepared so you should get your order in now.

A few weeks ago Mike Batchelor from Taunton popped into Emmett’s around lunchtime. We made him a sandwich and a coffee, and he must have enjoyed it because he emailed a few days later.

“I hope you'll remember that I stopped in last Wednesday about 2 o'clock and you made me a mystery sandwich and 2-shot latte to take away for my lunch (we chatted briefly about your Spanish selection). It was very possibly the best sandwich I've ever eaten and I'd like to buy some of the ham you used. Can you tell me what was in my sandwich, please. Regards, Mike”

Glad that Mike had enjoyed his lunch, Mark wrote back to let him know.
